The Winter Table: An Evening with the King of Oysters

An intimate evening of oysters, premium produce and perfectly paired wines.

Samphire’s Executive Chef Quim Hernandez and Jerry Fraser, “The King of Oysters”, invites guests to immerse themselves in a carefully curated winter dining experience.

Enjoy a seasonal menu celebrating the best of Australian produce, from freshly shucked oysters and premium seafood to Lake Janis Farm sirloin, all paired with Forrest Hill wines. 

Throughout the evening, live cooking demonstrations and storytelling reveal the inspiration, producers and craftmanship behind each course, offering a rare insight into the techniques that shape every dish.

Set in the Bayside Room at Samphire Rottnest, this intimate experience combines outstanding food, wine and storytelling against the backdrop of Rottnest Island in winter.
